Recipe: Summer Seasons Heirloom Tomato Toasts

What's the difference between a regular tomato and an heirloom tomato?  The difference is all in the flavor.  Rather than having a concern for uniformity of appearance, the heirloom tomato is grown for it's flavor profile.  Coming in an abundance of shapes sizes and colors, these juicy tomatoes have been passed down for generations...hence their name.

We love this recipe as it's the perfect highlight of a simple and elegant ingredient like the heirloom tomato atop our Gluten Free Bagel showing how simple is truly delicious.

Ingredients:
1 tbsp olive oil
3 tbsp white wine vinegar
3 tbsp water
2 tsp kosher salt
2 tsp coconut sugar
1 shallot, thinly sliced
1 or 2 heirloom tomatoes, thinly sliced
1 tbsp capers
1 radish, sliced paper thin
Fresh Dill, to garish
Salt and cracked pepper
DIRECTIONS:
  1. Prepare your pickled shallots: Add water and vinegar to a small pot with salt and sugar. Heat on low until the salt and coconut sugar are dissolved. Pour this mixture over the pickled shallot and set aside for 30 minutes. Drain and gently rinse. 
  2. Toast the bagels until golden brown with a slight crunch…that way they can really soak in the flavor as you drizzle with olive oil over top and sprinkle with salt. 
  3. Layer the thinly sliced heirloom tomatoes, pickled shallots, capers and thinly sliced radish. Season with salt and pepper. 
  4. Garnish with fresh dill.
